Keep it dark and cool: Vanilla does not like direct sunlight or heat. Store it in a dark, cool place, such as a cupboard. A refrigerator is not necessary and can be harmful as the pods can dry out and mold can develop if the packaging is not sealed properly.

How do you use vanilla in dishes?

Now that you know how to store vanilla, it's time to bring the flavors to life. Here are a few creative ways to use vanilla:

Make your own vanilla extract

  • What you need: A few vanilla pods and a bottle of vodka or rum.
  • How to do it: Cut the pods open lengthwise and put them in the bottle. Let this mixture steep for two weeks. Over time, the flavor will become even more intense. (And you can always add the bark of used vanilla beans.)
  • Why you want it: This homemade extract adds deep, authentic flavor to everything from cookies to cakes.

Turn regular sugar into vanilla sugar

  • Scrape out the seeds: Split a vanilla pod lengthwise. Use the back of a knife to scrape out those intensely fragrant seeds.
  • Combine: Add the seeds and the empty pod to a jar of sugar. Stir well.
  • Let alone: After two weeks you have sugar that smells and tastes like it came straight from a fancy pastry shop.
